the Olive Oil educational class

It is important to buy only product produced, packed and bottled in the same place. Every time you move the food you may are able to adulterate it….

To find an great olive oil, We need to start to treat olive oil like a great wine and track all the process, like for a France Grand cru, we understand immediately from which hills it come from.

When we buy olive oil, often there is just a website or a general name. Even worst when is written product in the Europe Community…what does it means? From where? Who really harvest it? We’ll never know with this European regulation….

So our suggestion is always to buy from a small trusted producer that you can investigate.

Italy sell more olive oil that what produce. We have the world record of packaging olive oil that we sell all over the world, also in Italy sometimes it is not easy to find a quality product. 

  

If we think that our needs of Olive Oil in Italy is not satisfy by the internal production. And that we have to buy a great part of the olive that we consume around the world…. Off course is even harder if you go to a discount GDO supermarket…

Also a good extra virgin olive oil should not cost less than 10 dollar per half liter, on our opinion…

Also often when you buy chili oil or garlic oil, you are buying a fake product where the taste of chili of garlic cover the bad smell of the olive oil! 

Off course we don’t trust the big brand  that sell all over the world and invest a lot of in advertising.

·         What type of olives do you grow? When was your last harvest and how much was picked? ·         What goes into the growing, harvesting, and processing of your organic olive oil?

Olive harvest is every October/November here  all in Italy, and should be almost the same all around the world.

We have the biggest biodiversity of the world, and this is what make our olive oil so unique and special!

In Italy there are 250.000.000 of olives trees, 533 variety,   and 43 of them are protected by the European Union.

  Off course extra virgin olive oil come only by cold and first press.

   What taste notes should a buyer look for when selecting high quality olive oil?

Every oil has its own character, this is why we need to study at least a year to be able to do a professional olive oil sommelier, however during our educational we love to highlight our terroir where we feel Tomato skin, artichokes, the grass just cut, and sometimes even lemon zest!

Like a wine the more you feel and listen from the nose. The more it is wide the better it is.  When we do educational class and cooking class here, we often do a blind test where we propose also a olive oil that cost 3 euro, and immediately we can feel the difference…

The bad olive oil is similar to the old car oil! We are very happy when our friends and guests realize it, whit out our help!

Olive Is one of the oldest tree of the world, we have stories from 6.000 years ago in Asia and Israel…

Olives where one of the first business market of the world..the Roman 

Catone the censor, 250 BC was giving the olive fall into the ground to the slaves, while the ones on the trees where using for the nobles…

Plinio il vecchio already was describing 48 variety of olives and was saying  not to harvest during when it rain!

And the first doctor of the world, Ippocratus was using olive oil as first remedy.

Extra virgin olive oil is very important to prevent cardiovascular diseases.

It is a product not a condiment. It give us nutritions, is not just something that make the cooking easier, we need to respect what the Roman where already calling the LIQUID GOLD!

·         Can you share a favorite recipe that showcases the flavor of olive oil?

The best for us  is the simple “Bruschetta”, toasted bread with crushed organic  tomatoes marinated in extra virgin organic olive oil and also the simila Fettu’nta ….just toast bread, extra virgin organic olive oil and the juice of half tomatoes. Fettunta means oily slice of bread, this is our morning breakfast every day!
