Pink and yellow gnocchi
Organic Potato dumplings our original recipe we do at our slow cooking classes.
You can make it also adding some saffron )melt in water to make them more yellow).
INGREDIENTS - FOR 4/5 PERSON:
1 kg of organic potatoes
200 gr. of organic soft flour
1 organic egg ( we call it the food glue)
pinch of salt
saffron and hot water to meld it (half glass).
Direction:
Boil potato (with skin) until they are very cooked.
When ready, peel them and press through a potato ricer into a large bowl. Add the saffron that you have already melt in a hot water glass.
Mix together the riced potatoes, the flour and the egg yolk, and a bit of salt. The dough should be well mixed and easy to handle.
Roll into a sausage-shape, and cut into even pieces

Cook the dumplings in salted water until they come to the surface of boiling water then serve with butter and sage.
