Pizzicotti

Pizzicotti pasta, in English Pinch pasta is the dish I always order at il Casale restaurant in Paciano.

To make pizzicotti you only need:

  • bread dough (water, flour, yeast)

  • A pinch of salt

  • Organic tomato jar

  • Pancetta, smoked bacon

  • Gaeta black olives, if you like

  • Parsley, if you like

  • Pecorino cheese

  • chilly peppers

  • 1 onion

  • extra virgin olive oil

    Directions:

  • Let the bread dough rise for 4 hours.

  • Boil water with salt in a pasta pot.

  • To make the sauce, cook the onion with olive oil and bacon and chili pepper, with low flame for 10 minutes. Add the tomato sauce and cook for 30 minutes. Add a pinch of salt.

  • When the sauce is cooked and the pasta water is boiling. Take a pinch of the bread dough and lunch it in the pasta water. One after the other very quickly. Cook for 5-10 minutes.

  • To serve: add parsley and pecorino cheese.
