Pizzicotti
Pizzicotti pasta, in English Pinch pasta is the dish I always order at il Casale restaurant in Paciano.
To make pizzicotti you only need:
bread dough (water, flour, yeast)
A pinch of salt
Organic tomato jar
Pancetta, smoked bacon
Gaeta black olives, if you like
Parsley, if you like
Pecorino cheese
chilly peppers
1 onion
extra virgin olive oil
Directions:
Let the bread dough rise for 4 hours.
Boil water with salt in a pasta pot.
To make the sauce, cook the onion with olive oil and bacon and chili pepper, with low flame for 10 minutes. Add the tomato sauce and cook for 30 minutes. Add a pinch of salt.
When the sauce is cooked and the pasta water is boiling. Take a pinch of the bread dough and lunch it in the pasta water. One after the other very quickly. Cook for 5-10 minutes.
To serve: add parsley and pecorino cheese.
